LAS VEGAS - The Light Group (owners of Caramel Bar & Lounge and FIX Restaurant & Bar, among others) bulked up their impressive culinary portfolio with the July launch of Yellowtail Sushi Restaurant & Bar in Bellagio Resort & Casino. NYC-based David Rockwell designed the space. Exec chef Akira Back, a former professional snowboarder-turned-Nobu Matsuhisa protégé, was recently exec chef at Matsuhisa (Aspen, CO). His menu covers both traditional and modern permutations of Japanese cuisine.
