So last Friday Yellowtail Sushi Restaurant & Bar rolled out the red carpet for Hollywood's elite as The Light Group's newest restaurant venture celebrated its Grand Opening. The restaurant has been open for a little over a month now, and trust me this is Vegas' new go-to destination for fine dining.

Welcoming a wide array of names throughout the entertainment industry, a variety of Hollywood's A-listers came to enjoy Yellowtail Sushi Restaurant & Bar's amazing cuisine. Among the list of celebrity diners were Eva Longoria, Charlie and Brooke Sheen, Paris Hilton, Nicky Hilton, Wilmer Valderrama, actress Michelle Rodriguez, recording artist Ryan Cabrera, Marlon Wayans, Shar Jackson, Janelle Perry (Sunset Tan), Rick Solomon, Brandon Davis, Playboy Playmate Destiny Davis, and Miss Nevada 2008 Veronica Grabwoski.

Guests enjoyed the culinary wonders of Yellowtail Sushi Restaurant & Bar's Executive Chef Akira Back, and dined on the chef's finest ingredient-driven preparations including signature items such as the tai snapper, kobe beef tataki, king crab tempura, rock shrimp, big-eye tuna pizza and the spicy tuna strawberry roll. Socialite Paris Hilton especially enjoyed Chef Back's kobe beef tataki (see photo), and the chef received special kudos from actress Eva Longoria among other numerous praises from the evening's guests for his delicious cuisine.

If you haven't been to the restaurant yet I strongly advise you to make your way over. The food is amazing and the ambiance is something that you have to experience to believe. Overlooking Lake Bellagio, and featuring fantastic views of the iconic fountain show, Yellowtail Sushi Restaurant & Bar is quickly becoming Vegas' newest culinary hotspot.
