The Bellagio Hotel and Casino raises its culinary portfolio once again with the addition of Yellowtail, introduced by The Light Group, Las Vegas' premier restaurant and nightlife company. Located just steps away from The Light Group's chic Caramel Bar & Lounge and sophisticated nightclub, The Bank, Yellowtail offers an unforgettable culinary experience for both the sushi novice and connoisseur.

Award-winning chef Akira Back has crafted a menu for the most exclusive clientele on the Strip, featuring a mix of traditional and modern Japanese cuisine. A former professional snowboarder, Chef Akiraıs innovative preparations are inspired by his global travels and experiences working with industry greats, such as Nobu, Morimoto and Nagao.

Seasonal fish and ingredients are flown in daily from the finest markets and purveyors around the world and showcased in sushi, sashimi, tempura and hand rolls. More innovative dishes include Ahi Tuna Pizza with shiso, an aromatic mint-like herb popular in Japan; Maine Lobster Carpaccio with onion and cilantro; Kobe Beef Tataki with shaved garlic ponzu; and a Quesadilla made with Japanese rice crackers. An extensive offering of proprietary sakes, wine, beer and signature cocktails, including the exotic yuzu-infused Peridot or the light and refreshing Asian Pear, complement the menu.
